{ Pineapple Pie }


Pineapple Pie. Oh, so good! I made it this past weekend. I am thinking of renaming it to Summer on a Dish Pie, Pineapple Tastes Better When You Live in Florida Pie, orrrr OMG This is So Good Pie.

Here is my recipe for Pineapple Pie

Need

* Two 20 ounces cans crushed pineapple---drain cans. Reserve the juice of both cans. You will only use half the juice in the recipe.
* 2 egg yolks
* 1/2 cup sugar See note below
* 1/2 cup brown sugar
* 1 tbsp honey
* 1/2 tsp vanilla extract Note: I keep a jar of cane sugar with two vanilla bean pods in it to infuse the sugar with vanilla. I use this in place of the regular sugar and vanilla extract
* 2 tbsp butter
* 1/2 cup cornstarch --I use Cream Brand Cornstarch because I think it is awesome for pies.
* 1 pre-baked 9 inch pie crust
* 2 cups heavy whipping cream for topping
* Edible flowers for garnish optional

Prepare

In a medium cooking pot and using a hand-held mixer or spatula, blend regular sugar, brown sugar, butter, egg yolks, honey and vanilla extract. Add both cans of crushed pineapple and half of the pineapple juice. Place pot over stove and bring to a slow boil. Add cornstarch and stir until mixture thickens to a nice stable consistency for pies. Remove from heat. If necessary, you can add a bit more cornstarch to thicken it or if too thick, then a little bit more of the juice or water to thin it. However, the measurements listed work well.

Place pineapple mixture into a cooled pre-baked pie crust and allow to cool completely. Once it is cooled, in a separate bowl, using a handheld mixer beat 2 cups heavy whipping cream for 5 minutes or until thick. Add the cream topping to pie. Serve or refrigerate.
I'm not kidding you, this pie is Mmm Mmm Good!

S'More Goodness



In my household, S'mores reign supreme amongst favorite yummies for my husband and daughter. It's like one of those stats where I am sure if you lined up s'mores side by side it would circle the earth 3x---THAT is the level of S'more eating that goes on between the two of them. S'mores remind me of all my fond memories of my years in Girl Scouts and camping. I also associate S'mores as one of the perfect cold weather-cozy up by the fire-favorite socks on-sort of treats. So I have done some web-hunting for some S'more recipes with a twist...although nothing will ever compare to a good ol' classic s'more. Above, is Coastal Living Magazine's recipe for grilled banana s'mores. You know how there are certain recipes where as soon as you read them, you think, "OMGosh! I must go out and buy everything I need to make this right now!"? Well. this is one of those recipes. However, it is night time and my daughter is asleep, so I will be making plans to make this over the weekend which will be perfect after a busy week. Until then, all I will be thinking is grilled banana s'mores, grilled banana s'mores, grilled bana----you get the point. Below are 2 more yummo S'more recipes I came across.



S'more Tiramisu by Southern Living. Okay, basically, this is one of those desserts where I'm a math genius S'mores + Tiramisu= Pure Bliss + Heaven

Leave it to Gourmet Magazine to come up with S'more Pie. If anyone can turn S'mores into a yummo pie like this one, it would only be Gourmet magazine. Think yummy sweet chocolatey graham crackery cloud of toasted marshmallow in a dish. Cue the singing angels when this pie comes out of the oven. Click here for recipe.

Brownie Oink Moo






Wanna have some fun in the kitchen and cool down on a hot summer day? Brownie Ice Cream Sandwiches to the rescue!!!!  I love these brownie cutters because they are perfect for making ice cream sandwiches with an imprinted image such as the cow and pig faces. Just use any brownie mix and bake according to directions. When brownies are done, let them cool slightly before using brownie cutters. Set the cut brownie shapes out to cool completely before adding ice cream. I like to wrap them with freezer paper and place them in the freezer so that they can firm up a bit. These little brownie ice cream sandwiches are a fantabulous treat for any summer day.
